Mike Dojc’s Chicken Mango Cold Rolls

Ingredients: cooked chicken breast, Mango, cilantro, shredded carrots, Thai Chili Sauce, rice paper.

Directions: Soak sheet of rice paper in warm water for 30 seconds or until it’s pliable. Slice chicken breast and mango into thin strips and arrange a few pieces in the middle of rice paper round along with shredded carrots, cilantro. Season with Thai chili sauce. Fold up roll just like a burrito. Transfer seam side down onto plate. Repeat to make as many rolls as ingredients permit.


**Re Thai chili sauce, If I’m in Canada I use President’s Choice Memories of Thailand Fiery Chili Pepper Sauce (available at Loblaws) and in the States I like Maggi Taste of Asia.

Don’t forget to super-size your snack bowl. On this continent more food is consumed on Super Bowl Sunday than any other holiday barring American Thanksgiving. Why do we get so peckish? Who knows, maybe there is something about staring at all those 300lb linebackers that gives us the munchies.

Old S-Bowl College Tradition

My buddies and I used to order twelve Wendy’s jr. burgers, unwrap them and stack them into a massive burger pyramid like the ones Jughead from Archie comics always makes. We salivate over our beefy heap restricting ourselves to one burger per touchdown or field goal. For every QB sack we down a shot of ketchup or relish.
